    Ingredients

    • Nonstick cooking spray
    • shredded hash brown potatoes (3 cups)
    • shredded cheese (3/4 cup)
    • cooked ham (3/4 cup)
    • red and green pepper (1/2 cup)
    • onions (1/4 cup)
    • eggs (4 large)

    Preparation mode

    Preheat oven to 350oF. Coat a 2 quart square baking dish with nonstick cooking spray. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, red pepper, green pepper and onion.

    In a bowl combine eggs, milk and pepper. Pour egg mixture over potato mixture in dish. Bake uncovered, for 40 - 45 minutes. Let stand 5 minutes before serving.
