    Ingredients

    • eggs (2 beaten)
    • Rice (2 cups)
    • Asian vegetable, frozen (12 oz)
    • chicken breast,cut into strips (2 cups)
    • teriyaki sauce (1/3 cup)
    • scallions (2 sliced)

    Preparation mode

    Cook rice, reserve. Meanwhile, in large nonstick skillet, heat 1 tbs oil over medium high heat; add eggs. Cook stirring, until set; remove from skillet.

    In same skillet, heat 1 tbsĀ  oil over medium-high heat. Add vegetables; cook, stirring, until softened, bout 2 minutes. Add chicken, teriyaki sauce and reserved rice and eggs. Cook stirring, until heated through. Sprinkle with scallions.
