    Ingredients

    • cooked chicken (2½ cup)
    • tomatoes (2 cups)
    • black olives (1/3 cup)
    • red onion - medium size (1/3 cup)
    • parsley - chopped fresh (¼ cup)
    • romaine lettuce (1 bag)
    • olive oil (3 tbsp)
    • red wine vinegar (1 tbs)
    • salt (¼ tsp)
    • ground oregano (½ tsp)
    • minced garlic (½ tsp)

    Preparation mode

    Cut chicken and tomatoes into chunks, the olives and onion in slices and chop the parsley. Whisk dressing ingredients: olive oil, red wine vinegar, salt, pepper, oregano and garlic  in a serving bowl and add chicken, stir in tomatoes, olives, onion and parsley.

    Arrange in large bowl on a bed of torn romaine lettuce; top with 1 cup crumbled feta cheese.
