    Ingredients

    • salt (taste)
    • black pepper (1/8 tsp)
    • lemon juice (3 tbsp)
    • lettuce (8 cups)
    • spinah baby (6 cup)
    • cherry tomatoes (1 cup)
    • cucumber -slices (1 cup)
    • red onion - medium size (1)
    • salmon (1 lb.)

    Preparation mode

    Marinate salmon fillets with salt, pepper and lemon for one hour.

    Preheat oven to 375oF

    Place salmon fillets in a foil lined baking pan and bake for 10 -12 minutes or until fish flakes easily with a fork. Cool.

    Meanwhile wash lettuce and spinach , tear into bite size pieces, arrange on salad platter. Wash all vegetables; cut tomatoes halves, cucumber slices, finely chopped onion. Mix all vegetable, and pour over lettuce and spinach. Gently shred salmon with two forks. Place in strips on platter, toss well.

    Sprinkle with pecans and raisins. Serve with your prefer dressing.
