    Ingredients

    • eggplant (1 medium)
    • eggs (3)
    • bread crumbs, italian seasoned (1 ½ cup)
    • vegetable oil (1½ cup)

    Preparation mode

    Peel eggplant, cut into thin slices. Soak the slices for 10 minutes in salted water.

    Dip eggplant slices in beaten eggs and bread crumbs.

    Fry in hot oil until browned.
