    Ingredients

    • penne pasta (1 pkge)
    • italian dressing (1/4 cup)
    • soy sauce (2 tsp.)
    • shrimp peeled & deveined (1 lb)
    • cucumber (1 medium)
    • cilantro - fresh (1/2 cup)
    • green pepper (1)
    • parmesan cheese shredded (2 tbs.)
    • cashews roasted (1/2 cup)

    Preparation mode

    Prepare pasta as directed on package, drain.

    In skillet mix dressing and soy sauce cook at medium high heat, add shrimp, cook stirring until are pink, about 10 minutes.

    In a salad bowl mix pasta with diced and seeded cucumber, chopped cilantro and green pepper, peanut, cheese and shrimp  toss well.

    May serve hot or cold.
