    Ingredients

    • pineapple (1 fresh)
    • low fat milk (1 cup)
    • Vanilla instant pudding (1/4 cup)
    • toasted coconut flakes (3 tbs)
    • toasted nuts, chopped (6 tbsps)

    Preparation mode

    Twist crown from pineapple. Cut pineapple lengthwise in quarters. Cut fruit from shell. Core and cut pineapple into chunks. Divide among eight 1 -cup souffle or dessert bowls.

    In blender, mix milk and dry pudding, 40 seconds (or beat together until blended). Transfer to a bowl and chill 10 minutes. Spoon evenly over pineapple. Top with nuts and coconut.
