    Ingredients

    • potatoes fresh (1½ lb)
    • lemon juice (1-tbs)
    • onions (1-big)
    • eggs (6p)
    • pimiento- diced and drained (¼-cup)
    • green pepper (1medium)
    • salt (taste)
    • Pepper (dash)
    • mayonnaise- nonfat (¼cup)

    Preparation mode

    Cut potatoes in cubed and cook  in lightly salted water with lemon juice for 15 minutes or until just tender; drain.

    Cook eggs until hard and cut in slice onion and eggs; diced green pepper and pimiento.

    In large serving bowl, combine cold potatoes and remaining ingredients. Toss gently.

    Refrigerate to chill.  Enjoy


    I use low calorie mayonnaise.
