    Ingredients

    • Spinach torn fresh (4 cups)
    • orange (1)
    • cherry tomatoes (1 cup)
    • orange juice (1 tsp)
    • jicama (1/4)
    • avocado (1 unit)
    • red wine vinaigrette (1/2 cup)
    • orange zest (1 tsp.)
    • fresh mint (1 tsp.)

    Preparation mode

    In a serving bowl toss together fresh spinach (trimmed) , jicama (peled and cut), orange (peeled and sectioned), cherry tomatoes (halved), and small avocado. Whisk vinaigrette with zest, juice and mint. Just before serving,  pour vinaigrette mixture over spinach mixture; toss.
